But, like any good yo-yo-er, we're back and frankly, I was incredibly uninspired this week. Maybe it was because I hadn't been coupon shopping in over a month (and thus, didn't have a pantry full of crap to spawn ideas) or maybe it's because last week we got turnips, cabbage and rutabaga in our Co-Op box (bleh!). Whatever it was, I had zero motivation to think up a proper game plan for the week's dinners. So, I did what any savvy
Combining their ideas with what I knew we're getting in this week's box, and what I just bought at the grocery store (based on sales, of course! Hey, $69 spent, $64 saved... that's a winner to me); here's what we've got on tap:
Sunday: Popcorn and cold cereal (What? I said I didn't go shopping until tonight!)
Monday: NY Strip Steak and Roasted Rosemary Sweet Potato Wedges
Tuesday:Vegetarian Lasagna using squash as the noodles and some of our fresh spinach from last week's CSA box.
Wednesday: Grilled Chicken with some sort of veggie. I haven't totally decided on which one it will be, because we have a crap ton of them currently in our fridge. (Crap-ton is not an official SI Unit, just FYI).
Thursday: Spicy Beef Stir Fry with broccoli, zucchini, bell pepper and onion
Friday: Pizza and Netflix Night! This week we're having frozen pizza, courtesy of this week's Meal Deal at Harris Teeter. When we can both eat for less than $4- we're jumping at the chance.
Saturday: Hot Dogs and corn on the cob (Keepin' It Klassy 'round these parts)
