Meal Plan Monday: We can do this healthy thing afterall ...

Well, it's been another week of healthy eating and so far so good. Casey (as expected) lost nearly all the weight he wanted to lose in two weeks. While I lost 6 pounds... I still have about another 30 15 or so to go. So to help keep us on track, I've got another full week of F-Factor friendly meals. Also, as a side note, I. Rocked. It. Out. at Harris Teeter this week. I bought a full week's worth of groceries for $65, including two 12-packs of Caffeine Free Diet Sodas and Laundry Detergent. Oh and also- not a single processed item. Mostly veggies and fruits! I was so excited. But that's neither here nor there; so without further ado... Here's what's on the menu:

Friday: Left over veggie soup from last week (I'm making another giant pot again tonight for lunches and filler snacks).

Saturday: OK, I'll admit it- By the time we got Tiny into bed, it was 8:30 and I still needed to go to the grocery store. So, we had small hamburgers from McDonald's and sides of veggie soup again.

Sunday: F-Factor Meat Loaf and steamed broccoli: To make the meat loaf, combine lean ground beef, one egg, 2/3c tomato juice, salt, pepper and 3/4c quick oats. Bake for 45 mins at 350, then add sauce (1/3c ketchup, 1 tsp mustard, 1 tbs brown sugar) and bake another 30 minutes. It was pretty tasty and I don't even like meat loaf. Ground beef was on sale last week for less than $2/lb and the broccoli was from a few months ago that I cut up and froze when it was on sale.

Monday: Honey, Soy, Ginger marinated Salmon and sauteed spinach and garlic.

Tuesday: Vegetable Beef Stew in the crock pot. (Stew meat was BOGO free this week at the Teet)

Wednesday: Crispy Pecan Chicken and roasted eggplant and tomatoes. Coat chicken breasts in buttermilk or plain yogurt for at least 6 hours and then toss with crumbed Special K (We're using Protein Plus), pecans, lemon pepper and poultry seasoning and salt. Bake at 400 for 25 minutes. (Chicken was buy 1 get 2 free last week and the Special K cereal, I bought during super doubles for less than $2 a box. Eggplant and tomatoes were on sale this week).

Thursday: Turkey Chili (probably in a crock pot!)
