Meal Plan Monday: Back in the saddle ...

After taking a week off from my official house-wifery duties, we're back with a full week's worth of dinners at home. Harris Teeter had a lot of really good meat on sale this week; so meal planning should have been easy. Then my dear husband suggested that we attempt to get back on some semblance of our diet before our inevitable holiday bender from our 2 lbs. of Moravian cookies purchased this weekend at the end of the month. Just review... little carbs, lots of fiber.

With winter in full-swing, it was a little tricky finding good fresh veggies at decent prices (we are after all, on a pretty tight budget). Luckily, I've been stock piling frozen veggies, both from a box and fresh that I've cut and frozen, like Armageddon is upon us; so we've got plenty of fiber and figure friendly side dishes for the week.

So, without further ado... Here's what's on the menu this week:

Friday: Beef Stew with carrots, onions, green beans and celery (Here's the recipe: Take a hunk of meat (browned on all sides), throw in some carrots, canned green beans (or fresh if you have them), cut up an onion and some celery and put all that in a crock pot. Then dump a can of Cream of Mushroom soup on top, cook on low for however many hours until you're ready to eat.)

Saturday: We were "scheduled" to have salmon but because of a freak snowstorm (note: this wasn't really a snow storm for anyone other than us North Carolinians. We had a light dusting of snow; enough to count as a blizzard in these parts), so instead I made a big pot of chili.

Sunday: Pan-seared salmon with a citrus rub and a walnut/mint pesto on top and steamed carrots on the side. I'll look for the recipe that Casey used and post it when I find it because it was GOOD (and yes, I did say that my husband cooked. He's an amazing cook, too!).

Monday: Spicy Beef Stir-fry with carrots, mushrooms, bell pepper, onion and broccoli

Tuesday: Pork BBQ in a crock-pot and salad on the side (Take a hunk of pork, put in a crock pot, add equal parts of Coke (I use Diet Coke) and BBQ sauce, cook on low for a few hours, shred with a fork and serve!)

Wednesday: Pan-Seared London Broil over salad

Thursday: Zucchini Parmesan (Cut Zucchini into slices, saute with onions and mushrooms, layer in a baking dish with pasta sauce and mozzarella cheese and tomatoes, top with more cheese and bake for ~20 mins at 350.)

Beatrice Kate will be enjoying: probably nothing because she hates all food banana, rutabaga, more carrots and apples, avocado, and peas this week

Don't forget, you can find other menu ideas here. What's on your menu this week?
